Every family seems to have its own pizza-night negotiation. One kid won't eat anything green. Someone wants it spicy. Somebody else insists pineapple belongs on pizza, and nobody is changing their mind. Add a family member who avoids gluten, and ordering can turn into a half-hour debate that ends with two separate takeout bags from two different places.
We think pizza night should be simpler than that. At Joe's Pizza Stone, we've built our menu so everyone at the table, including the person skipping the gluten, can order something they're genuinely excited to eat.
On our menu, you'll see our crust option listed as gluten-friendly, and we choose that word carefully. Our crust is made without gluten, but we prepare it in the same kitchen as our regular dough, so we can't promise it's completely free of trace gluten.
For families who avoid gluten by preference or for general comfort, it's a great fit. If someone in your household has celiac disease or a serious gluten sensitivity, please talk to our team when you order so you can make the choice that's right for you. We'd rather be upfront than have anyone guess.
The easiest way to start is with our create-your-own option. Pick the gluten-friendly crust, choose a sauce and cheese, and build from there. Some combinations that tend to win over the whole table:
We carry a long list of meats, cheeses, veggies, and sauces, from classics like mushrooms and green peppers to Kalamata olives, jalapeños, and tequila lime smoked BBQ. If you're watching for gluten, ask us about specific sauces and meats as you build your order, since some ingredients may not suit every diet.
Gluten is what gives regular dough its stretch and chew. Take it away, and a crust can easily turn out soft in the middle or crumbly around the edges, especially in a standard oven.
That's where our stone comes in. We bake every pizza on a hot stone, and that direct, even heat crisps the bottom of the crust while the toppings cook through. For a gluten-friendly base, that crisp foundation makes a real difference. It holds its shape when you pick up a slice, and it doesn't collapse under a generous layer of cheese.
It's the same method we've used since we opened our first shop in Dawson Creek in 2015, and every new pizza franchise location that joins our family bakes on stone the same way. Consistency matters to us, especially for customers who've been let down by gluten-free crusts in the past.
Mixed households are the norm, not the exception. A few habits make ordering easier:
Pizza night is rarely just about the pizza. Our pizza-and-wings combos make feeding a full table easy, and sides like fries, onion rings, and potato wedges round out the order for bigger appetites. We also offer Caesar and Mediterranean salads for anyone who wants something fresh alongside their slice.
Put on a movie, turn on an Oilers game, or just clear the dining table and let everyone dig in. When nobody's stuck with a meal they don't want, dinner tends to run a lot longer, and in the best possible way.
We've grown from that single Dawson Creek shop into communities across northern B.C. and Alberta, including Grande Prairie, Lethbridge, Fort St. John, and our Sherwood Park location just east of the city. We're also looking for local owners to open a pizza franchise in Edmonton, so more families across the city can enjoy stone-baked pizza without a long drive.
Until then, our Sherwood Park team is ready for your next family order. Build your pizza, choose your crust, add a few sides, and let us take care of dinner. Everyone gets their favorite, and nobody has to compromise.
